What kind of things do you provide in your own kitchen? Well, probably depends on what you cook and for how many people you cook. If you cook for 1-4 persons you probably only need two or three pans and a set of plates and cutlery, right. Now think about being a professional cook (in a decent restaurant). You don't know how many people you will cook for this or the other day. Also, you don't know what they will order from the kitchen. Accordingly you need enough pans, pots, knives and other tools to cook everything properly. If you only have one knife to prepare all your foods, well, good luck! You know what I want to say with that little example. If you're a pro you are prepared for anything, so you have all the required tools to do the job. Unfortunately you will also buy stuff you will never use, because nobody ordered that special cooked fish at your restaurant.
